Know your farmer. Know your food. Bring home approximately 415 pounds of finished, packaged beef from StarWalker Organic Farms in Northern California. Our pasture-raised, grass-fed and grass-finished cattle are Regenerative Organic Certified® and USDA Organic, and are never given antibiotics. We process through our own USDA-inspected StarHarvest facility, keeping the connection from our farm to your family. What's included Your whole-beef share includes the assortment below. Weights are approximate and vary naturally from animal to animal; the total is finished packaged weight, not hanging weight. Steaks All steaks are individually packaged, one steak per package. • New York strip: approximately 21 lb; 1¼-inch cuts, one steak per package. • Boneless ribeye: approximately 19 lb; 1¼-inch cuts, one steak per package. • Top sirloin: approximately 9 lb; 1¼-inch cuts, one steak per package. • Sirloin tip steaks: approximately 6 lb; 1¼-inch cuts, one steak per package. • Tenderloin: approximately 6 lb; 2-inch cuts, one steak per package. • Flat iron: approximately 4 lb. • Flank steak: approximately 4 lb. • Skirt steak: approximately 4 lb, whole and rolled. • Bavette: approximately 3 lb. • London broil: approximately 17 lb. Roasts, brisket and ribs • Brisket: approximately 18 lb, portioned into halves. • Cross rib roast: approximately 9 lb. • Chuck roast: 7 packages, approximately 21 lb total. • Bottom round roast: approximately 17 lb. • Tri-tip: approximately 5 lb, with the fat cap on. • Short ribs: approximately 14 lb, cut 2½ inches thick. • Back ribs: approximately 7 lb. Everyday essentials and bones • Ground beef: approximately 200 lb in 1-lb packages. • Stew meat: approximately 14 lb in seven 2-lb packages. • Osso buco shanks: approximately 12 lb. • Crosscut marrow bones: approximately 6 lb, cut into 2-inch sections. Individual cut weights are rounded estimates and are not additional to the approximately 415-lb total. Shipping and delivery Free shipping in our Western delivery zone. A flat $850 shipping charge applies to whole-beef orders in our Central and Eastern delivery zones. Shipping is available within the contiguous United States; Alaska and Hawaii are excluded. Please allow up to two weeks from ordering to delivery. In-stock shares may arrive sooner. Your beef arrives in multiple insulated cartons, so please have freezer space ready for the full share.
