What you’ll get For a holiday dinner built around roast pork, our Fresh Ham Roast offers a generous cut with the bone left in and plenty of room for your own seasoning. Each roast is approximately 5 lb and costs $75. Try an herb rub, roast it slowly, and serve carved slices with potatoes, roasted vegetables, and the pan juices. Fresh ham means raw, uncured pork. This roast is unsmoked and must be cooked before serving. Expect the flavor and texture of roast pork rather than the salty, smoky taste or familiar pink appearance of a cured holiday ham. Here, “fresh” describes the uncured cut, not a promise that it has never been frozen. How to cook If frozen, thaw in the refrigerator at 40°F or below before roasting. Set your oven to 325°F and cook until a food thermometer reads at least 145°F before removing the roast from the oven. Check several places in the thickest portions without touching the bone. Rest for 15 minutes before carving; the food safety minimum is 3 minutes. Cooking time varies with the roast and oven, so use temperature rather than the clock to decide when it is ready.
