The shank is found on the leg of a cow, just above the knee or hock. This cut of meat is cut in horizontal cuts, which is why beef shank looks like a steak with a circle of the leg bone in each piece.
This 1.5 inch thick cut becomes deliciously flavorful and tenderized when braised.
